Pescado Verde Shrimp Ceviche

Ingredients
- 1 lb small shrimp fresh or frozen, cooked
- ¼ cup orange juice, fresh squeezed
- ⅓ cup lime juice, fresh squeezed
- ¼ cup red onion, small diced
- 2 cloves of garlic, minced or grated
- 1 jalapeno, seeded and small diced
- 1 medium tomato, small diced
- 1 Tbs Spicewalla Pescado Verde
- 1 avocado, small diced
- Fresh cilantro, for garnish
- Crackers or tortilla chips for serving
Instructions
- In a large mixing bowl combine shrimp, orange juice, lime juice, red onion, garlic, jalapeno, tomato, and Pescado Verde. Stir to combine and let marinate in the fridge for 10-12 minutes or up to an hour.
- Just before serving, stir in avocado and garnish with fresh cilantro. Serve with crackers or tortilla chips.
